Minced Meat

The meat used in the recipes is usually cold broiled (poached) meat which has been minced. Daisy’s arm would have been well employed turning the handle for hours but for ease feel free to shred the chicken or put it into the food processor. Whilst you will not get the long sausage shapes she would have achieved, setting the machine onto “pulse” gives a fairly good comparison.

How to Poach a Chicken

Even today this is the tastiest and most economical way to make your bird feed the family. It ensured every last scrap of the meat falls away from the bone and also makes a delicious bi-product of chicken stock for gravies and soups.

Place your bird into your largest cooking pot. Add in celery, carrots, onion, bay leaf and peppercorns, and fill with enough water to cover.

Bring to the boil and then leave to simmer for an hour and 20 minutes.

Serve hot or set aside to cool in order to mince for sandwiches.
